Bright straw yellow in color, it displays a fine and continuous perlage. The nose reveals citrus notes and hints of dried fruit, with delicate nuances of bread crust. On the palate, it is taut, savory, and vertical, with vibrant freshness, making it perfect to pair with raw seafood and fish-based dishes.

Grape refrigeration
The freshly harvested grapes are immediately refrigerated in a cold room at 2° C

Winemaking
Fermentation in vats at a controlled temperature at 14/16°C for approximately 20 days

Refinement
Following the draft, the bottles refine on the yeasts for approximately 60 months. This is followed by riddling, placing on the pupitres and disgorging.
